Chicken Jicama Slaw

3 cups cooked chicken, diced (we used a rotisserie chicken)

2 cups broccoli slaw

½ cup cucumber, diced

1/2 small red onion, finely diced

1 cup diced jicama

½ cup paleo mayo (see below)

1 tablespoon balsamic vinegar

1 tsp paprika

½ tsp chili powder

pinch of cayenne pepper

Mix all ingredients together and enjoy!  Serves 4 adults.

Olive Oil Mayo– 1egg, 1 1/2 tbsp apple cider vinegar, pinch of sea salt, few shakes of cayenne pepper, 1 tsp yellow mustard, 1 cup olive oil. Add everything to blender except olive oil. Turn blender on low and gently stream olive oil into mixture until have a mayo like consistency.
