Lime and Basil Beef Kabobs


1 pound of beef (chuck,top sirloin,rib-eye,or tenderloin) cut into 1-inch cubes

1/4 cup of fresh lime juice

2 tablespoons of coconut oil (melted)

1 teaspoon of grated orange peel (zest)

2 garlic cloves,peeled

1 handful of fresh basil leaves

1 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon of black pepper

2 bell peppers (any color) cut into 1- inch pieces

1 onion, red or yellow, cut into 1-inch pieces


Place the cubes of meat in a large glass dish or bowl. Set aside. In a blender, combine lime juice,coconut oil,orange zest,garlic cloves,basil, cumin,salt and  pepper until smooth. Pour over meat. Let sit for 1/2 hour at room temperature or up to 2 hours in refrigerator. In seperate bowl toss the bell peppers,onion with either a little bit of marinade or drizzle of olive oil and sea salt and pepper. Heat grill to high. Skewer meat and veggies, alternating chunks of meat with bell pepper and onion. Grill 8 minutes, turning every 2 minutes. Yum!
