Super Bowl Recipies


Yes the Superbowl is Sunday, I hope weather cooperates and its not the Super”snow”bowl. Since the Patriots did not make it we can focus on the food and the commercials.

Honey Garlic Chicken Wings

18 wings or drummies

2 TBL of sesame oil

2 1/2 TBL of honey

3 cloves of garlic, minced

1 tsp of red pepper flakes

Salt and Pepper

Mix the oil,honey,garlic and red pepper flakes, salt and pepper together. Pour half mixture over wings and stir until throughly coated. Marinate 2 to 3 hours or up to overnight.

Spread wings over a lined cookie sheet and place under broiler until nice and crispy. Turn frequently and baste generously with remaining marinade.


Mexican and Coconut Chicken

2 lbs of Chicken Tenders

1 cup of Almond Flour divided in half into two shallow bowls

In one bowl along with Almond flour add 2 tsp of coconut flakes,1 tsp of garlic powder, salt and pepper

in other bowl add 1 tsp of chili powder,1/2 tsp of cumin,1/2 tsp of paprika, 1 tsp of garlic powder, salt and pepper

Cut each chicken tender in half with either knife or kitchen scissors (work awesome, just got a pair)

Dredge 1/2 of tenders in coconut mixture and other half in mexican mixture.

Bake on a cookie sheet lined with aluminum foils and sprayed with olive oil, for 15 minutes, turn over halfway through cooking time.

Serve with honey mustard (mix 1-2 tsp of honey with 1/2 cup of dijon mustard) and guacamole
